Our signature loaf. A white sourdough made with stone ground, high extraction flour from Tuerong Farm, making it very nutritionally dense, with a slightly tangy wholemeal flavour, chewy texture and dark crust. 

The dough is cold fermented in mass overnight, with a very low inoculation of sourdough, then cut and baked with minimal shaping or manipulation the next day. This style produces a loaf that in our opinion provides the perfect meeting point of flavour and texture in both crust and crumb. 

Ingredients
Wheat flour, rye flour, water, salt.

Pre-Order Terms
We require pre-orders to be placed no later than 12pm on the day prior to pick up.

Bread is usually available from around 8am — we’ll email you when your order is ready for collection.

If you’re looking to pre-order more than 10 items for any product and/or more than what is available, we will need at least 48 hours notice. Please reach out to us via info@iristhebakery.com and we can help you finalise your order.
